Five Minute Chicken Poblano Soup…
This is one of our most frequently eaten meals in our house the kids gobble it up. I usually make two InstantPots full. Yes, I have two… it’s the most ingenious kitchen gadget EVER!!
Ingredients
- ½ Tbs evoo
- 1 tsp ground cumin
- 1 tsp dried minced onion
- 1 tsp salt
- ½ tsp garlic powder
- ¼ tsp cayenne
- ¼ tsp black pepper
- 1 medium onion, diced
- 2 poblano chiles, ribbed and seeded
- 1 jalapeno, diced
- 1 8oz chicken breast, cubed
- 2 15oz cans great northern beans, rinsed and drained
- 1 ½ c chicken broth
- ½ c chopped cilantro
- Lemon or lime quarters
Steps
- Preheat pressure cooker to saute function, and oil, spices, and chicken. Saute about 5 minutes.
- Add beans and broth.
- Set to manual, 5 minutes.
- Quick release.
- Stir in cilantro, squeeze lemon or lime over top.
