Five Minute Chicken Poblano Soup…

This is one of our most frequently eaten meals in our house the kids gobble it up. I usually make two InstantPots full. Yes, I have two… it’s the most ingenious kitchen gadget EVER!!
Ingredients
  • ½ Tbs evoo
  • 1 tsp ground cumin
  • 1 tsp dried minced onion
  • 1 tsp salt
  • ½ tsp garlic powder
  • ¼ tsp cayenne
  • ¼ tsp black pepper
  • 1 medium onion, diced
  • 2 poblano chiles, ribbed and seeded
  • 1 jalapeno, diced
  • 1 8oz chicken breast, cubed
  • 2 15oz cans great northern beans, rinsed and drained
  • 1 ½ c chicken broth
  • ½ c chopped cilantro
  • Lemon or lime quarters
Steps
  • Preheat pressure cooker to saute function, and oil, spices, and chicken. Saute about 5 minutes.
  • Add beans and broth.
  • Set to manual, 5 minutes.
  • Quick release.
  • Stir in cilantro, squeeze lemon or lime over top.

Bina’s Curry-

 

One thing you will learn about my cooking is it’s simple and FAST! I am so busy, day in and day out, I dont have time for nonsence. So here is one of my go to’s.

 

1 pound ground turkey   (Use whatever meat makes you happy! I’ve also done meatless and just use steam in the bag veggie blends.)

One can of garbanzo beans

One can of unsweetened coconut cream

Handful of baby carrots 

Handful of mini sweet red peppers 

One small onion

Salt

Pepper

Curry  

Cumin

Cayenne 

 

Sauté veggies and brown your meat. Add all the seasonings to taste. Add the garbanzo beans and coconut milk and simmer for 10min. Throw over cauliflower rice or whole grain rice. (I ate it as is without rice, yummy!)
